Basic Roast Chicken

  1. Preheat oven to 220°C (or 430°F).
  2. Put the chicken in a large roasting pan and season cavity with salt and pepper. 
  3. Squeeze the juice from half the lemon over chicken. 
  4. Add the lemon halves into chicken cavity. 
  5. Brush both sides of chicken with olive oil and season with salt and pepper. 
  6. Add some fresh thyme.
  7. Roast the chicken in the oven for 1 hour. 
  8. Cover with aluminium foil and leave to rest for 15 minutes before carving.

  • 2 teaspoons olive oil 
  • Juice 1 lemon

  • Fresh thyme (optional)
