- In a saucepan, heat the butter over medium heat.
- Add flour and stir until smooth.
- Cook until the mixture turns a light, stirring with a wooden spoon.
- Gradually add the milk, whisking continuously until very smooth.
- Bring to the boil, cook for 5 minutes or until mixture thickens.
- Season with salt and pepper.
- Remove from heat and allow to cool.
