Vanilla Cupcake

Method

  1. Preheat oven to 375°C or 190°C
  2. Line muffin cups with papers 
  3. In a large bowl, add the flour, baking powder, caster sugar and salt; mix all ingredients together 
  4. In a second bowl, add the milk, butter (or vegetable oil), vanilla extract, eggs and combine 
  5. Mix all ingredients together (wet and dry) to make a soft dough
  6. Add the water and mix until well combined 
  7. Spoon the mixture into the cupcake liners until they are half full and bake for 15 minutes 
  8. Remove the cupcakes from oven and set aside to cool for 10 minutes 
  9. Vanilla frosting: combine the butter and shortening in a bowl and mix 
  10. Add 2 cups of powdered sugar, the vanilla extract and 1 tablespoon of milk and mix until smooth
  11. Add remaining ingredients and combine 
  12. Pipe the frosting onto each cupcake.

  • 2 1/2 cups flour 
  • 3 teaspoons baking powder 
  • 1 tablespoon vanilla extract 
  • 1/2 cup melted butter or vegetable oil 
  • 2 eggs 
  • 1 cup water 
  • 1 pinch salt
  • For the vanilla frosting : 
  • 1/2 cup salted butter 
  • 4 cups powdered sugar
  • 1 1/2 teaspoon vanilla extract 
  • 3 tablespoons milk
  • 1/2 cup shortening
